Ghee is a type of clarified butter made by simmering butter until the milk solids separate from the fats and caramelize, infusing a nutty aroma. It is then strained off to remove all caramelized milk solids. The filtered, clear, pure fat is known as ghee.
I still remember the taste and smell of homemade ghee, especially the one that my mother used to make. Now I make my own too, except I used store-bought unsalted butter, where my mom would make everything from scratch, but it is still a great achievement for me that I was able to make it all by myself, and it tasted absolutely delicious.
In India, everything is made at home, including ghee, butter, and buttermilk. Clarified butter is ghee. Every day, my mother would boil milk, and as it cooled, a layer of cream would form on top. She would gather this cream and use it to make butter. When the butter is finished, slowly melt it over medium heat to create ghee.

Ghee keeps well at room temperature and has a long shelf life. However, from experience, avoid using a wet spoon as this could cause it to deteriorate and turn moldy.
